Somewhere along the way, most sauces became a choice between sugary squeeze bottles, regional loyalties, and products designed to win shelf space instead of complement food.

The world doesn't need another loud sauce

LEDGER started over sandwiches at one of our usual lunch spots.

I ordered the same sandwich I get every visit, only this time with barbecue sauce on the side.

A few bites in, I set the sauce down and looked across the table and said, "Man...I love barbecue sauce, but all I taste is sauce."

My friend laughed and nodded because he'd been thinking the same thing for years.

As a private chef, he'd tried more barbecue sauces than he could count. Most were too sweet. Some were too sharp. Others were too spicy. None were balanced enough to keep reaching for.

No matter what, every sauce seemed determined to be the loudest thing on the plate.

So I asked him a simple question:

"Can you make one?"

From that moment, we started experimenting. Lunch after lunch, we kept tasting.

Eventually, we had the sauce neither of us had been able to find.

It stopped feeling like traditional barbecue sauce. Everyone who tried it started asking for bottles.

And that's how LEDGER began.
